Summer is, sadly, coming to an end.  But that doesn’t mean the weather agrees and that we should stop eating like it is.  
Our school is on the quarter system starts late September, while other kids are well into their second week of school, I am still enjoying the month of summer I have left, and cooking like it too.  
Ceviche is the perfect dish - it’s citrusy and fishy, easy to make and requires very little preparation.  The lime and lemon juice effectively “cook” the fish, so there is no need for an oven to heat up your kitchen, and the result is delish.  Make it, and enjoy what is left of summer!
Options:  Switching up the fish for crab or shrimp.  Serving with other veggies in the mix, like cucumber or peppers.
Tilapia Ceviche (adapted from allrecipes.com)
0.25 to 0.5 pounds of tilapia
0.5 onion, sliced
1 habanero, diced
1 tomato, diced
2 lemons, juiced
7 limes juiced
Mix the lime and the lemon juice together.
In a large bowl, mix the onion, tomato, habanero and tilapia together.
Pour the lemon/lime mix on the fish and make sure everything is well doused in juice.
Place in the fridge and let the juices cook the fish.
Keep refrigerated for about 4 to 5 hours.
Remove from the fridge and serve on a bed of lettuce with tortillas or french fries.
Serves five
